BBQ Veggie Burgers

Flavor-infused BBQ burgers that are perfect on the grill or oven baked. The flavor in these burgers doesn't stop with the toppings, but continues to burst in every bite of the burger!


Prep time:  10 minutes

Cook time: 20 minutes

Serves: 4-6


Kitchen Tools
  • medium bowl
  • baking sheet
  • silicone mat or parchment paper
  • mixing spoons
Ingredients 
  • Good for You Burger meal starter pouch
  • 3/4 cups of cold water
  • 1 cup black beans, rinsed, drained, and lightly mashed
  • ½ cup oil-free BBQ sauce (any flavor)
  • 1 cup frozen corn, thawed
    Directions 
    1. Preheat oven to 400℉.
    2. In a bowl, add Good for You meal starter pouch contents, lightly mashed black beans, BBQ sauce, and corn.  
    3. Add the water, then knead for 5 minutes.
    4. Let the mixture rest for 5 minutes.
    5. Form mixture into the burger sizes you prefer and place on a nonstick baking sheet.
    6. Bake for 25 minutes or until crispy, flipping the burgers midway through.
    7. Serve with whole wheat burger buns and the toppings of your choice.

      These were very good. I used the “new” directions that were on the paper that was shipped with them. I used some leftover grilled peppers, onions and mushrooms along with some raw cauliflower and purple onion from the Farmer’s Mkt for my veggies to add. I put the beginning part of the recipe in my Vitamix to pulse up the veggies and chickpeas and it worked well. It makes 6 good sized burgers so I still have 3 left over. I am wondering how long they will keep in the fridge? Does anyone know?

      OK, I said a prayer while making these and my prayer was answered! I was hesitant after the yucky veggie balls but these burgers were very good. My husband gave a thumbs up, which is great because he likes a beef hamburger when I serve a burger. But these are a winner. I added 1/2 cup of diced red onion and only kneaded the “dough” for 3 minutes instead of 5. These are also very filling and satisfying…the mix made 6 very large burgers. Two more meals for the two of us!
