Coconut Mushroom Stew

A sweet, creamy and slightly tangy coconut-flavored mushroom stew served over rice.

Prep time:  5 minutes

Cook time: 20-22 minutes

Serves: 4-6

Kitchen Tools
  • medium pan
  • blender
  • knives
  • mixing spoons
  • Meal starter pouch
  • 3 cups sliced fresh mushrooms
  • 4 1/2 cups cold water
  1. Add pouch contents to a medium pot, along with water and mushrooms. Mix well.
  2. Bring to a boil, then simmer on low heat for 20-22 minutes, stirring occasionally. Coconut milk lumps will dissolve naturally as you cook and stir.

    This is TREMENDOUS!!! Really good flavor, very filling and so easy to make! At first I thought it was going to be too “soupy,” so I made a little rice on the side to add in just in case but it was NOT NECESSARY….I did cook it for about 10 extra minutes and by then the rice which is included in the package had really gotten done and no more soupiness. Both my husband and I really liked this meal and there is enough for another meal, too! Excellent product…will order again (in multiples :-)
