Creole Rice and Beans

A delicious twist on a classic Creole Red Beans and Rice recipe.

Prep time:  5 minutes

Cook time: 30 minutes

Serves: 4-6

  • Meal starter pouch
  • 1 (15-oz) can red beans, rinsed and drained
  • 1 (28-oz) can crushed tomatoes
  • 2 celery stalks, diced
  • 2 1/2 cups cold water
  1. In a medium pan, add pouch contents, red beans, crushed tomatoes, celery, and water. Stir to combine. 
  2. Bring to a boil, then simmer on low heat for 30 minutes. (The original package says 20-25 minutes, but 30 minutes works better, and this change will be made in our next packaging run.)

    Loved the flavors in this dish. I served it over riced cauliflower , which stretched it into more serving without alot of calories.

    We liked this original recipe, with varying tolerances for the spice level. I did add 2 tsp maple syrup & a tbsp of unflavored, unsweetened plant milk to balance it for us. Also we served it on top of torn greens, & topped with dried chives, sunflower seeds & pumpkin seeds. Will definitely purchase again.
