One-Pot Mediterranean Medley
A simple one-pot dish with the perfect balance of spice and vegetables. A simple effortless recipe that can use almost any type of seasonal or favorite vegetable blend.

Cook time: 20-22 minutes
- 1 large pot
- mixing spoons
- 1 meal starter pouch
- 28 ounce can diced tomatoes
- 1 (14-16 oz) bag frozen vegetable blend (California/Mediterranean/or Italian Blend)
- 2 1/2 cups cold water
- Add to a medium pot the meal starter pouch contents, tomatoes, and water and mix well. The coconut milk lumps will dissolve naturally as it cooks.
- Cook over medium heat until bubbly stirring continuously. Reduce heat to low and simmer for 20-22 minutes. Stir occasionally to prevent sticking. Add the frozen vegetables during the last 5-8 minutes of cooking.
