One-Pot Mediterranean Medley 

A simple one-pot dish with the perfect balance of spice and vegetables. A simple effortless recipe that can use almost any type of seasonal or favorite vegetable blend.  

Prep time:  5-10 minutes minutes

Cook time: 20-22 minutes

Serves: 4-6

Kitchen Tools
  • 1 large pot
  • mixing spoons
  • 1 meal starter pouch
  • 28 ounce can diced tomatoes
  • 1 (14-16 oz) bag frozen vegetable blend (California/Mediterranean/or Italian Blend)
  • 2 1/2 cups cold water
  1. Add to a medium pot the meal starter pouch contents, tomatoes, and water and mix well. The coconut milk lumps will dissolve naturally as it cooks.
  2. Cook over medium heat until bubbly stirring continuously.  Reduce heat to low and simmer  for 20-22 minutes. Stir occasionally to prevent sticking.  Add the frozen vegetables during the last 5-8 minutes of cooking.
