Prep time:  15 minutes

Cook time: 30-35 minutes

Serves: 4

  • 1 Veggie Burger Starter Pack
  • 15-ounce can chickpeas, rinsed and drained
  • 1 cup boiling water
  • 2 cups frozen peas and carrots, thawed
  • 1 onion, diced
  • 2 celery stalks, diced
  • ¾ cup of your favorite BBQ Sauce.

    1. Preheat oven to 375°F.  Line a 8" x 4" x 2½" loaf pan with parchment paper.
    2. In a medium-sized mixing bowl, roughly smash the chickpeas with a fork. Add the contents of the Veggie Burger Starter Pack, boiling water, and remaining ingredients, except the BBQ sauce, and thoroughly combine. Let the mixture stand for 10 minutes.
    3. Spoon the loaf mixture into the prepared loaf pan and even out the mixture with a spatula. Pour the BBQ sauce over the top of the loaf and bake for 30-35 minutes, or until the glaze is caramelized and the loaf is solid.
    4. Let the loaf stand for 15 minutes, and then lift the loaf out of the loaf pan using the parchment. Slice and serve.

    • Break up the leftovers and form them into small meatballs. Bake them in the oven and serve with your favorite pasta sauce.
    • Slice leftovers and use in sandwiches or wraps
