African Stew

This hearty stew is rich with flavor, color, and nutrition. The coconut, peanut, and curry give this dish an exotic flavor. It's easy to prepare and very inexpensive. Serve as a stew or over brown rice.

  • 1 Peanut Starter Pack
  • 1 (14-ounce) can lite coconut milk
  • 2 onions, sliced into half rings
  • 2 large sweet potatoes, cut into ½-inch cubes
  • 1 (15-ounce) can chickpeas, rinsed and drained
  • 1 (28-ounce) can diced tomatoes
  • 2 cups chopped frozen spinach


    1. Place the contents of the Peanut Starter Pack and coconut milk into a high-speed blender and blend until smooth and creamy, then pour into a pot.
    2. Add all the remaining vegetable ingredients to the pot and cook over high heat until bubbly, about 8-10 minutes. Turn down the heat to medium-low and simmer for 30 minutes, or until the sweet potatoes are tender.
