Indian Red Lentil Dahl

This easy, Indian dish is made with creamy red lentils, spices, and vegetables. This dish is hearty, comforting, flavorful, and packed with plant-based protein.

Cook time: 25-30 minutes

  • 1 Coconut Curry Starter Pack
  • 1¼ cups red lentils
  • 2½ cups water
  • ¾ cup lite coconut milk
  • 1 sweet potato, peeled and diced
  • 1 celery stalk, diced
  • 1 onion, diced
  • 15-ounce can diced tomatoes, undrained
  • ¼ cup chopped fresh cilantro, for garnish


    1. Combine the lentils and 2½ cups water in a large stockpot and bring to a boil over medium-high heat. Reduce the heat to medium and cook for 10 minutes, stirring every few minutes to prevent burning on the bottom.
    2. Place the Coconut Curry Starter Pack and ¾ cup of lite coconut milk into a high-speed blender and blend until smooth and creamy. Add this curry sauce and the remaining vegetable ingredients, except cilantro, to the pot and stir until completely incorporated. Reduce the heat to medium-low and simmer for 25-30 minutes. Garnish with cilantro, and serve warm.
