Smoky Mushroom Boscaiola
A rustic creamy mushroom sauce is loaded with the earthy flavors of mushrooms, garlic, and smoke to create a perfect comfort dish.

Ingredients
- 1 Cheese Starter Pack
- 1 onion, cut in half and thinly sliced
- 10 ounces mushrooms (any type), sliced
- ¼ cup dry white wine
- 2 cups unsweetened non-dairy milk
- 2 tablespoons Dijon mustard
- 1 tablespoon smoked paprika
- 4 cups cooked whole-grain rice, pasta, or gnocchi
Directions
- In a large skillet, sauté the mushrooms and onions in the wine over medium-high heat until tender, about 5–7 minutes.
- Place the contents of the Cheese Starter Pack, 2 cups unsweetened non-dairy milk, Dijon mustard, and smoked paprika into a high-speed blender and blend until smooth and creamy.
- Place the cheese sauce and remaining ingredients into a stockpot and cook over medium-high until bubbly. Stir to prevent sticking. Reduce heat to low and simmer for 10-15 minutes.
- Add the cream sauce to the skillet with mushrooms and onions and cook over medium heat until bubbly and thickened. Salt and pepper to taste. Serve over gnocchi or pasta.
