Smoky Mushroom Boscaiola

​​A rustic creamy mushroom sauce is loaded with the earthy flavors of mushrooms, garlic, and smoke to create a perfect comfort dish.

Prep time:  10 minutes

Cook time: 15-20 minutes

Serves: 4

  • 1 Cheese Starter Pack
  • 1 onion, cut in half and thinly sliced
  • 10 ounces mushrooms (any type), sliced
  • ¼ cup dry white wine
  • 2 cups unsweetened non-dairy milk
  • 2 tablespoons Dijon mustard
  • 1 tablespoon smoked paprika
  • 4 cups cooked whole-grain rice, pasta, or gnocchi


    1. In a large skillet, sauté the mushrooms and onions in the wine over medium-high heat until tender, about 5–7 minutes.
    2. Place the contents of the Cheese Starter Pack, 2 cups unsweetened non-dairy milk, Dijon mustard, and smoked paprika into a high-speed blender and blend until smooth and creamy.  
    3. Place the cheese sauce and remaining ingredients into a stockpot and cook over medium-high until bubbly.  Stir to prevent sticking. Reduce heat to low and simmer for 10-15 minutes. 
    4. Add the cream sauce to the skillet with mushrooms and onions and cook over medium heat until bubbly and thickened. Salt and pepper to taste. Serve over gnocchi or pasta.
