Chik’n Salad with Soy Curls®

Prep time    20 minutes

Yield               4 servings

Ingredients

  • 4 ounces Soy Curls (about half a package) (or 2-3 cups garbanzo beans, roughly smashed)
  • 3/4-1 cup Easy Nut Free Tofu Mayonnaise
  • 2 teaspoons lemon juice
  • 2 celery stalks, small diced
  • 1 carrot, shredded
  • 3 green onions, sliced
  • ¼ cup chopped dill pickles (or dill pickle relish)
  • 1 cup red or green grapes, chopped
  • 2 tablespoon fresh chopped dill
  • 2 teaspoon Dijon mustard
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper

Optional Sandwich Toppings

  • 1 tomato, sliced
  • 4-6 lettuce leaves
  • 1-2 cups sprouts
  • 1 cucumber, sliced
  • 1 red onion, sliced

Directions

  1. Re-constitute the soy curls by placing them in a bowl and pouring 2 cups of hot water (or veggie broth) over them. Let them sit for about 12-15 minutes. When they are soft and hydrated, drain and squeeze out the excess water. 
  2. Pulse the soy curls in a food processor until a finer texture is achieved.
  3. Place the processed soy curls into a medium size mixing bowl and begin adding the remaining ingredients. Mix together until ingredients are well combined. Serve immediately or chill for later. Store in an airtight container for up to 5 days. *See serving suggestions.

✏️ Tips & Hints

  • I recommend you store soy curls in the refrigerator or freezer to keep them fresh. Soy Curls are an all-natural product that do not contain any preservatives or additives. They also contain natural fats and will go rancid when stored on your pantry for long periods of time. 

Easy Tofu Mayonnaise

Prep time    10 minutes  

Cook time   0 minutes    

Yield               1 1/4 cups    

Ingredients

  • 7 ounces extra firm tofu
  • 1/4 cup raw cashews (You can omit this out for a nut free mayo.)
  • 1 tablespoon fresh lemon juice
  • 2 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 2 teaspoon maple syrup
  • ½ teaspoon sea salt, or to taste
  • 1-2 tablespoons water

 Directions

  1. Place all the ingredients in a high-speed blender and blend until smooth and shiny. 

   Serving Suggestions 🥙  

  1. Whole grain sandwiches or pitas 
  2. On a bed of greens
  3. Whole grain tortilla wraps
  4. Collard Wraps
  5. Stuff a tomato
