Chik’n Salad with Soy Curls®: Many of us remember that classic chicken salad that was perfect for any sandwich filling. I’ve got the perfect replacement recipe that begins with Soy Curls, tofu mayonnaise, veggies, and spices that make this a ‘knock your socks off’ kind of salad! You definitely don’t have to give up this traditional recipe since replacing meat with Butler Soy Curls is so easy. Soy curls are a wholesome food; it's only ingredient is 100% Non-GMO soybeans grown without chemical pesticides. That’s it! Soy curls are amazing because they really do have a meaty chewy texture that will fool your most avid meat-eating friends. I order soy curls directly from Butler Foods or you can also find them on Amazon. https://butlerfoods.com/soycurls.html

🥄 Kitchen Tools
high speed blender
1 medium bowl
1 large bowl
If you plan on using Butler Soy Curls, I recommend you order them right away since they can take 4-5 days to arrive by mail. You can order through Butler Foods or Amazon.
¼ cup chopped dill pickles (or dill pickle relish)
1 cup red or green grapes, chopped
2 tablespoon fresh chopped dill
2 teaspoon Dijon mustard
½ teaspoon sea salt
¼ teaspoon black pepper
Optional Sandwich Toppings
1 tomato, sliced
4-6 lettuce leaves
1-2 cups sprouts
1 cucumber, sliced
1 red onion, sliced
Re-constitute the soy curls by placing them in a bowl and pouring 2 cups of hot water (or veggie broth) over them. Let them sit for about 12-15 minutes. When they are soft and hydrated, drain and squeeze out the excess water.
Pulse the soy curls in a food processor until a finer texture is achieved.
Place the processed soy curls into a medium size mixing bowl and begin adding the remaining ingredients. Mix together until ingredients are well combined. Serve immediately or chill for later. Store in an airtight container for up to 5 days. *See serving suggestions.
✏️ Tips & Hints
I recommend you store soy curls in the refrigerator or freezer to keep them fresh. Soy Curls are an all-natural product that do not contain any preservatives or additives. They also contain natural fats and will go rancid when stored on your pantry for long periods of time.
